The Flavor Note Book is a chemistry‑first newsletter that builds understanding one concept at a time. Each issue focuses on a single idea, an ingredient family, a process, or a foundational concept, with a short visual where it helps and plain language throughout.

Flavor can feel mystical. It isn’t. I’m writing this to:

Improve decisions: understanding beats buzzwords when choosing materials and processes.
Teach clearly: short visuals + plain language so non‑experts can follow along.

What “flavor” actually means (taste × aroma × trigeminal), why we add it (consistency, stability, cost, seasonal variation), and what it can’t fix.
2) How flavors are used in powder beverage products
Spray‑dried vs. agglomerated, carriers and oil load, how dissolution and matrix effects shape what you actually taste in‑cup.
3) What makes citrus unique?
Why citrus smells so “alive” (limonene top notes, citral body, linalool lift), and why oxidation, light, and heat matter for handling and shelf life.
